Grow Your Own Green Beans

We decided on a pole variety of green beans for our garden. Pole green bean varieties produce for a longer season than do bush varieties. We grew the variety of pole beans called Kentucky Wonder. It was our first year and we were pleased with the amount of harvest that we had from this particular bean. I think that next year we’ll try a colored bean, but I wanted to grow Kentucky Wonder this year as they remind me of fresh green beans we had as kids. All colored green beans, ones that are gold or yellow or purple, have the same taste as green beans.
When we harvested the beans I froze what I couldn’t cook within a few days. I found that freezing worked well for me. It was easy as all it required was a pot to boil water, a bowl of ice water and freezer bags. We have quite a few string beans in the freezer now, more than enough to last us through for several months. Perhaps next year I’ll consider canning them. Where frozen green beans are good up to 18 months some experts say that properly canned green beans last up to five years (due to the fact that they are low-acid) although I don’t think I’d want to eat them if they’re that old. Canning is relatively simple but requires a lot more equipment than freezing does.
Of course the best thing about growing your own green beans is eating them. My husband’s favorite green bean recipe is very simple, they’re boiled in chicken stock. Boiled, boiled and boiled. Most “gourmets” will tell you not to overcook green beans. This recipe simmers the beans for at least 45 minutes. I drain them add butter, salt and pepper to taste. I don’t think that I’ll be using any of my frozen green beans in the Thanksgiving green bean casserole though. Store bought canned or frozen string beans work just fine in that recipe. I’ll save my home grown green beans for recipes where they’ll really shine through.

Healthy Bean Salad Recipes and They are Perfect for Diabetics (includes Yogurt Salad Dressing Recipe)

GARBANZO BEAN SALAD
2 cups finely shredded carrot
1 1/2 cups thinly sliced bell pepper
1 1/2 cups chopped plum tomatoes
1/4 cup finely chopped red onion
2 cans (15 1/2-oz each) cans garbanzo beans, drained
12 cups salad greens
In a large bowl, combine carrots, bell pepper, tomatoes, onion, and beans. Pour 1/2 cup of Yogurt Dressing (recipe follows) over carrot mixture and toss gently to coat. To serve place 2 cups of salad greens on a plate. Drizzle greens with 1 tbsp of the yogurt dressing. Top with 1 1/3 cups of the vegetable mixture.
Makes 6 servings
YOGURT DRESSING:
1/3 cup chopped fresh cilantro
2 tbsp olive oil
1 tbsp lemon juice
1 1/2 tsp curry powder
1/4 tsp salt, optional
1/2 tsp bottled minced garlic
1/4 tsp freshly ground black pepper
8-oz plain fat-free yogurt
In a small bowl, combine all ingredients using a whisk.
BEAN AND BACON SALAD
2 cans (16 oz each) whole green beans, drained
1/2 cup chopped onion
1/3 cup extra-virgin olive oil
1/4 cup vinegar
1/4 tsp salt, optional
1/4 tsp black pepper
4 hard-boiled eggs, chopped
1/4 cup light mayonnaise
1 tsp prepared mustard
2 tsp vinegar
dash of salt, optional
4 slices bacon, fried crisp and crumbled
paprika for garnish
Combine beans, onions, olive oil, 1/4 cup vinegar, 1/4 tsp salt, and pepper. Toss mixture lightly; cover and refrigerate.
Mix eggs, mayonnaise, mustard, 2 tsp vinegar, and dash of salt. Just before serving, drain chilled bean mixture, add the bacon and toss well. Place each serving on a lettuce leaf. top with a spoonful of the egg mixture and sprinkle with paprika for garnish.
Yield: 6 servings

You may remember the school yard chime, “Beans, beans, the magical fruit…” You say “musical?” Well, I say magical! The FDA agrees and has approved a U.S. dietary guidance message that says bean-rich diets may reduce your risk of heart disease and certain cancers. This includes garbanzo, kidney, black beans and other legumes (not the yellow and green bean varieties). Studies also suggest that eating beans as part of a healthy diet may help to manage diabetes and help cut the risk of high blood pressure and stroke.
Fiber-ific
When it comes to a healthy diabetes diet, beans are fantastic! Chock-full of fiber, beans have a low glycemic index (the rate at which a food raises your blood sugar), and provide sustained energy while slowly being released into your blood stream. A one-half cup serving of most beans contain 15 to 20 grams of carbohydrate and up to an incredible 8 grams of fiber.
The fiber in beans helps to fill you up (but not out), while promoting a healthy digestive tract and helping to lower blood cholesterol levels. Combine equal amounts of lean beef and beans for the best chili in town. Add beans to whole grain pasta or rice side dishes to add creaminess and extra fiber. Pureed beans make great dips and spreads. For a quick and easy White Bean Dip, puree 1 15-ounce can of drained cannellini beans with 2 cloves of garlic, 2 tablespoons of each olive oil and lemon juice, and 1 teaspoon of oregano. Add salt and pepper to taste.
