Being born and raised in the deep South, I do not know where my recently developed taste for spicy food came from. I do not remember much spicy food being served at the dinner table when I was growing up. Although life has taken me far from the South, my love for the Southern cuisine has never diminished. And, this new love for adding “spicy” to my Southern dishes has me a little pleasantly surprised.

I was unaware that my taste for spicy food or additives had blended into my daily diet of Southern dishes. But, recently I recognized that I was on to something. Maybe, the rest of the world has been eating like this forever, but it was new to me. And, as I searched the internet to see if anyone was suggesting adding spicy flavor to Southern recipes, I could not find any.

You may argue that cajun food has always been spicy. Some may consider that Southern food, since it originated in Louisiana. And, yes, I agree cajun food is spicy. However, to me Cajun food is a breed of it’s own. It’s not what I would call traditional Southern food.

I’m talking about green beans, fried okra, black eyed peas, cornbread and turnip greens. And, Southern fried chicken, hushpuppies and home made biscuits and gravy.

So, when I realized I was enjoying spicy additives with my favorite traditional Southern dishes , I had to step back and ask myself, “where did this come from?”

I have found that adding a small slice of jalapeno pepper to turnip greens and a touch of crushed red pepper to fried okra really enhances the flavor. And, a splash of hot sauce on “everything” Southern is delightful. Try dipping your chicken in a mild hot sauce before coating with flour for a great Southern fried chicken. Of course, some may call this simply “hot wings…but not the way I cook it. Hot wings are not cooked Southern style like I cook my fried chicken (free recipe on my website).

I have tried many of the store brand hot sauces, and they are pretty good, but most are too hot or too mild and lacking in flavor. And, I was satisfied until I recently ran across a home made hot sauce recipe that blows all the others out of the water. It is fantastic!

It’s called “Butt-Kicking” Spicy Lime Sauce (my name for it). And, I want to share the recipe with you. Here’s how to make your own.

Ingredients:

6 large jalapeno peppers (fresh is better, but you can use bottled)

6 garlic cloves

1 small onion

2 cups apple cider vinegar

1/4 cup chopped cilantro

2 teaspoons salt

juice of 2 limes

1 teaspoon black pepper

Remove the seeds and ribs from the peppers and cut into medium chunks. Roughly chop the onion and garlic and put all the chopped ingredients into a small saucepan. Pour in the vinegar and bring to a boil. Reduce heat and simmer 10 minutes.

Roughly chop the cilantro and put into a blender with the salt, pepper and lime juice.

When the jalapeno mixture is cooked, allow to cool 10 minutes, then add to the blender.

Turn the blender on low for 10 seconds, then increase to highest setting and puree for 3 minutes.

If you want a pure liquid sauce, strain through a medium hole strainer, however, I prefer not to strain. I like the fine pulp in the sauce.

Pour into sterilized jars and refrigerate. The sauce will keep about a month under refrigeration. Makes about a pint.

Note: Sterilize jars by placing jars and lids in boiling water for 15 minutes.

This sauce is very unique tasting due to the cilantro and lime juice. I doubt you will find anything like it in your market. And, this is better because it’s fresh. And, you made it yourself.

I put a bottle of this sauce on the table for every meal, including breakfast (it’s great on an omelette). Actually, it’s good on everything. I haven’t tried ice cream yet, but …hummmm.

The coffee beans are then dried under the sun or by machines, until the moisture level is about 10% before they can be packed for storage.

Another method of getting to the coffee beans without undergoing the fermentation process is to dry the whole berry in the sun. It normally takes about 10 to 14 days to complete the process with constant raking of the coffee beans to prevent mildew from forming. This method is popular and widely used by coffee producers where water is scarce. The dried flesh is then physically removed leaving only the coffee beans.

The dried coffee beans is then sorted and graded before they can be stored or shipped to buyers. At this stage, the coffee bean is called green coffee beans.

Sometimes the coffee beans will undergo an additional aging process. The reason for this is because when coffee was first introduced into Europe, the coffee beans have undergone a journey of about six months. Europeans have already developed a preference for this taste and therefore to simulate the taste, the coffee beans are further aged.

Roasting The Coffee Beans

Roasting is the final process the coffee beans have to undergo before they are commercially marketed. It is also possible to purchase un-roasted coffee beans that you can personally roast them yourself.

When the coffee beans are subjected to heat, there’s a chemical reaction happening within the coffee beans where the sugar and acid will begin to react releasing its aroma. The coffee beans will turn darker due to caramelized sucrose. When this happens, the coffee beans are quickly cooled to prevent damage to the coffee beans.

When roasting the green coffee beans, a lot of carbon dioxide is released as a by-product. The carbon dioxide helps to “seal” the coffee beans from loosing its flavor and aroma. Depending on how the coffee beans are stored, it may take some time before the optimum peak flavor. After reaching its peak, it will start loosing its flavor again.

If you are trying to roast your own coffee beans at home, be aware that you may not be successful during the first few times. You might over-burn your coffee beans during your first few tries. Never be discouraged, but try until you get the taste and flavor that appeals to you. Remember to process in small amounts to maintain freshness of your coffee.

Grinding The Coffee Beans

Before the roasted coffee beans can be used, you need to grind the coffee beans first. The coarseness of your coffee depends on your preference and the type of coffee-brewing method. It can range from coarse to very fine as in the Turkish grind. For example, if you’re using a percolator, a course coffee powder is suitable but if you are using an Espresso machines, an extra fine coffee powder is required.

Beans are a member of the legume family, a group of nitrogen fixing plants.  This means that they have the unique ability to pull nitrogen from the air and put it into the soil.  For this reason, nitrogen-loving plants like tomatoes will usually thrive in spots where bean plants resided the year prior.  For extra healthy, vigorous plants, dampen the seeds and coat with nitrogen inoculant before planting.  Nitrogen inoculant is a black, grainy substance that aids the plants in their early growth stages.  It’s very inexpensive and can be found at most specialty gardening stores.  If you have leftover nitrogen inoculant at the end of the season, throw it away.  You won’t want to use it the next year, because most of the bacteria will have died by then.  Nitrogen inoculant is only good for one planting season.

Bean plants generally fall into one of two categories: bush and pole.  Bush beans are low, bushy plants that usually grow to about knee high.  They are known to be highly productive, usually providing several pickings over a two to three week period.  Successive plantings of bush beans will provide a continuous harvest throughout the summer.  Pick pods daily to keep the plants as productive as possible.  Once the plants are done producing, it’s usually best to go ahead and remove them from the garden all together.  Be sure to avoid handling the plants or picking pods in wet weather, as this will spread disease.

Pole beans come in as many sizes and varieties as bush beans; however, they are a climbing plant that grows on a trellis or other structure.  Pole bean plants are known to be vigorous growers and heavy producers.  When planting, it’s a good idea to go ahead and install your trellis or other support structure at the same time, because the plants will grow so rapidly.  Pole beans will generally produce for a longer period than bush bean plants, provided that the pods are picked while they’re very young.

Aside from the two primary categories of bush and pole, bean plants can also be broken down into two other categories: snap and shell.  Snap beans are those whose pods are edible.  When harvesting them, you’ll usually want to use the produce as quickly as possible, while they are still fresh.  Use them the same day they’re picked, if possible.  Snap beans are wonderful steamed, baked, stir fried, or even eaten raw, and are also a good choice if you want to can some of your fresh vegetables.

Shell beans, on the other hand, are surrounded by tough, inedible pods that must be removed prior to consumption.  Pinto, black, red, and kidney beans are all examples of shell beans.  Harvesting these plants is a somewhat different process.  Shell beans should be allowed to ripen and dry while still on the plant before harvesting.  Wait until the pods turn brown and the plant begins to die.  Then pull the entire plant up from the ground and put it in a hot place so it can dry out for about a week or so.  At that point, you can open the pods and remove the individual beans.  Spread them out on cookie sheets and place in a 175 degree oven for about 15 to 20 minutes.  This will kill off any potential pests.  Finally, the dried beans can be stored in airtight containers.  When you’re ready to use, reconstitute in water overnight and cook as usual.

Beans make a wonderful addition to any home vegetable garden.  If you’ve never grown them before, give them a try!  A packet of seed will cost you only a few dollars at most, and you’ll yield pounds of fresh produce for eating, canning, or drying.  Anyone who has ever tasted homegrown beans knows that the result is definitely worth the effort.

2 (8 oz) cans tomato sauce

41/2 oz can green chiles, drained and chopped

28 oz can diced tomatoes, undrained

1 T chili powder

1 t cumin

2 T olive oil

1 t salt

 

What you do:

 

In a large skillet, brown meat in heated oil.  Place meat in slow cooker.  Add remaining ingredients to crock-pot and mix thoroughly.  Cook, covered, for 8 hours on low.

 

 

Sausage and Beef Chili

 

 

What you need:

 

3/4 lb bulk spicy Italian sausage

3/4 lb ground beef

1 green pepper, chopped

1 large onion, chopped

16 oz dried red beans, rinsed and drained

1 (28 oz) and 1 (14.5 oz) can diced tomatoes, undrained

15 oz can tomato sauce

6 oz can tomato paste

4 T chili powder

2 T ground cumin

2 garlic cloves, minced

1 t salt

 

What you do:

 

Brown beef and sausage in a large skillet, drain.  In a 6 quart crock-pot/slow cooker, add all ingredients and mix.  Cook, covered, for 8-10 hours on low, or until beans are tender but not mushy. 

 

 

Both of these recipes are great served with sour cream, cheese and green onion on top.  To add more heat, try some jalapenos or a couple shakes of hot sauce.

In fact, it is the polyphenols which make green tea so much more effective than other beverages in fighting disease and illness.

Green Tea and Cholesterol

There have been some intriguing studies indicating that green tea can be effective in the fight against high cholesterol. Specifically, the beverage reduces “bad” cholesterol and boosts “good” cholesterol, improving an individual’s overall cholesterol profile.

Specifically, the researchers examined the correlation between green tea use and the serum lipid concentrations of more than 1300 men who underwent retirement health exams at the Self-Defense Forces Fukuoka Hospital between 1986 and 1988.

The researchers factored out variables such as alcohol use, use of tobacco, exercise levels, body mass index, and rank.

They then discovered that the more green tea a patient drank, the lower his serum cholesterol levels. Men who drank nine or more cups of tea each day had total cholesterol levels that were eight mg/dl lower than those who drank two or fewer cups a day.

The serum cholesterol levels seemed to also decrease for men who ate a great deal of rice and soy beans, and increase for those who ate more Western foods.

However, adjusting for these additional diet variables did not seem to affect the correlation between green tea use and total cholesterol levels.

Additional Evidence from the Animal Kingdom

It’s been said that there is a definite link between diet and exercise and coronary heart disease. Therefore, anything in the diet that improves serum lipid profiles should reduce the incidence of heart problems.

It’s also known that green tea contains phytochemicals that work to decrease serum cholesterol as well as triglycerides.

In one animal study, 45 rats were subjected to a variety of treatments, including green tea. The study showed that consuming green tea improved the serum lipid profile by reducing total cholesterol, bad cholesterol, and trans fats. In addition, liver fat content decreased in rats that received a large amount of green tea.

Other Positive Effects of Green Tea Drinking

The polyphenols found in green tea may have some additional positive health effects. For instance, a number of animal and test tube studies indicate that these chemicals may have a substantial anti-cancer effect, especially in inhibiting the spread of melanoma, or skin cancer cells.

Green tea has also been linked to a reduction in oral cancers and dental cavities.

Huevos Rancheros

 

What you need:

 

2 T olive oil

6 eggs

1 c sharp cheddar cheese

1/4 t salt

4 oz can green chiles (seeded and chopped)

3/4 c green pepper, chopped

6 six inch tortillas, flour or corn

1/2 c onion chopped

1 garlic clove, minced

28-32 oz can tomatoes, chopped and drained

 

What you do:

 

Heat tortillas one at a time, in preheated skillet over med heat.  Turn over when they start to get puffy, repeat on other side.  Wrap tortillas in foil and put in oven on warm setting.

In large skillet, cook onion, garlic, and green pepper in 1T oil until tender.  Stir in green chiles, tomatoes and salt.  Simmer for 8-10 minutes, uncovered.

In another skillet, heat one T olive oil.  Break eggs into skillet and cook sunny side up until cooked to desired preference.  Serve sauce on hot tortillas, topped with egg. Sprinkle on cheese; serve.

 

 

Breakfast Skillet

 

What you need:

 

1lb bulk pork sausage

1/2 c chopped onion

4 oz canned mushrooms, sliced

5 cups hash brown potatoes, frozen

1/2 cup chopped green pepper

1/4 t salt

1/8 t pepper

4 large eggs

1 c cheddar cheese, shredded

salsa

 

What you do:

 

In a large skillet, brown sausage.  Add mushrooms, onion, green pepper, hash browns, salt and pepper.  Cook for 15-20 minutes over med-high heat, or until potatoes are nicely browned.  Beat eggs and pour over potatoes.  Sprinkle cheese over mixture.  Cook, covered, on low heat for 12-15 minutes, or until eggs are set and cheese is melted.  Serve with salsa on the side.  Salt and pepper to taste.

 

 

Breakfast Bake

 

What you need:

 

32 oz bag frozen hash browns

8 eggs, beaten

1 medium onion, chopped

1 green pepper, chopped

11/2 c cooked ham, chopped

11/2 c sharp cheddar cheese, shredded

2-3 T olive oil

salt and pepper to taste

 

What you do:

 

Preheat oven to 350 degrees.  Heat oil in a large skillet.  Add hash browns, green pepper and onion and cook until potatoes are nicely browned. 

Layer bottom of a lightly greased 9″ x 13″ baking pan with potato mixture.  Add salt and pepper.  Layer ham over potatoes.  Pour eggs evenly over ham and potatoes.  Top with cheddar cheese.  Cover with foil and cook for 30 minutes; serve.

I have noticed in this hard economic time more and more people are turning to food that cost less, that means for meat most people are eating more and more chicken. In fact, my husband who works for a local grocery store as a meat cutter says the beef sales are down about 30% from last year but the chicken sales are up 25%. With us all eat more and more chicken that means we are probably eating it night after night which becomes really mundane. So what do you do?

You find ways to keep the chicken exciting and make sure from night to night it is different. Meaning you need to find recipes that are high in flavor but still keep costs down. Then we tend to run into another problem flavor means time, right? And let’s face it most of us don’t have a lot of time to make dinner with work, kids and soccer practice. So now we need recipes for chicken breasts that are cheap, flavorful, AND don’t take much time.

You’re in luck because I just so happen to know a few, well okay a lot, of recipes just like that. Here is one that is very quick, tastes great and you can customize it to your families tastes and size.

Chicken Rice

3 c cooked rice (you can use white, brown, instant, or even Rice-a-Roni)

2 Chicken breast cooked and cubed (I will cook 5-6 breast for my family of 4 and then freeze the other rest)

1-2 c of your choice of frozen veggies (I personally like something green, like broccoli, peas, or green beans with mine)

You add all of this together on Medium heat adding a little water if necessary for 10-15 minutes. Then season with pepper a little salt and if you choose, garlic powder.

Serves 4.

This recipe above will feed four and it only cost me about 5 dollars to make. That ends up costing just over $1 a person and that to me is absolutely amazing. Would you like another simple recipe to keep you going for another day? Of course you do, so here it is.

Chicken and gravy

4 Chicken Breast

2 cans of Cream of Chicken Soup

1 c Rice uncooked (again white, brown, instant, or whatever)

2 c water for regular rice (1 ¼ c for instant)

You pour the rice into the crock-pot and then add the water. You will then gently put the chicken on top of the rice, the chicken will move the rice a bit and it is no big deal. Then you pour the soup in cover it up and cook. Cook for 8-9 hours on Low and 5 on High. Serve with your choice of veggie.

Serves 4.

This recipe cost a little more, but I average about $6, so that is $1.50 per person. At that price you should be able to stay under budget every month for food, or just reduce how much you budget.

You are probably familiar with the naughty children’s rhyme: “Beans, beans, good for the heart/The more you eat, the more you…” The first part is true, and as for the second, well, it can now be cut by up to 70 percent. Beans deserve their reputation for causing flatulence. Flatulence results when carbohydrates (scratches and sugars) arrive in the colon incompletely digested and are fermented by the bacteria there. The fermentation process releases gas. Any incompletely digested carbohydrate – from bagels to pasta – can ferment in the colon and cause gas. But beans are the richest sources of two particular carbohydrates, raffinose and stachyose, that the body cannot digest because humans lack the enzyme to do it.

If gas is a problem for you, do not swear off beans. Instead, boil, rinse and soak them. Boil dried beans in a covered pot for three minutes, then let them stand for two hours. Next pour off the water, add enough new water to cover the beans, then replace this water after two hours and let the beans soak overnight. Rinse them once more before cooking. Or you can add Beano to bean dishes. It contains the missing enzyme that allows the body to get digest raffinose and stachyose. Beano is available at health food stores and some pharmacies and supermarkets.

Why would you want to go to all this trouble just to eat beans? Because they are good for you.

Diabetes. Bean cuisine gives everyone protection from heart disease, but people with diabetes enjoy special bean benefits. Diabetes greatly increases the risk of heart disease, which is an excellent reason for anyone with diabetes to boost their bean consumption. In addition, the soluble fiber in beans also helps keep blood sugar under control.

Heart disease. Beans are a staple of the Mediterranean diet that helps prevent heart disease. Just by eating a half-cup of cooked beans a day for about a month reduces cholesterol an average of 10 percent. The type of bean does not matter – pinto, black, kidney, lentils, garbanzos, soybeans, red, navy, white, baked; they all cut cholesterol. Why? Because they are high in soluble fiber, which helps eliminate cholesterol from the body. Every 1 percent decrease in cholesterol results in a 2 percent decrease in heart attack risk, so one daily serving of beans reduces heart attack risk about 20 percent, especially if it takes the place of meat, cheese or other high-fat foods.

Lung and pancreatic cancer. All beans are high in folic acid, one of the B vitamins. There was a connection between folic acid deficiency and lung cancer. It was found that high levels of the B vitamin in the lung tissue of healthy men, but much lower levels in cancerous lungs. Folic acid can also be found in abundance in green vegetables such as spinach and broccoli. It was also found that compared with people who ate beans rarely or not at all, those who ate them at least once a week enjoyed significant protection from pancreatic cancer.

Over the last decade, so many studies have shown that folic acid prevents neural tube defects that doctors now recommend folic acid supplements for pregnant women. Osteoporosis. Manganese, an essential trace mineral is important for bone strength. Animals deficient in manganese develop severe osteoporosis, and these studies show that women with osteoporosis tend to have low manganese levels. Beans are a rich sources of manganese. 1 chicken, cut-up

2 tbsps olive oil

1 clove garlic, minced

2 cans (16 oz each) stewed tomatoes

1 tsp dried basil

2 bay leaves

1 (10 oz) pkg frozen green beans

2 (16 oz cans) chick-peas (Garbanzo beans), drained

1 1/2 cups hot cooked rice

Remove skin from chicken. Heat oil in a large skillet over medium-high heat; add chicken and brown on all sides. Add onions and garlic. Saute for 5 minutes or until onions are brown. Add undrained tomatoes, basil, allspice and bay leaves to skillet. Bring to a simmer and reduce heat. Cook, covered, for 20 minutes. Remove and discard bay leaves. Add green beans and chick peas to skillet. Simmer, covered, for 10 minutes or until beans and chicken are tender. Spoon rice onto a serving platter. Arrange chicken and vegetables over rice.

Yield: 4 servings

The common solvents that are used for decaffeination are ethyl acetate or methylene chloride which both has low boiling points. A tedious process that will thus lead to decaffeinated coffee. What is not known to everyone however is that when beans undergo decaffeination, it actually harms the quality of the coffee beans. I also prepare lentil soup each week, and add this to the food as well. Legumes, like lentils and other dried beans, are high in plant protein. Finally, I prepare long grain brown rice, and my homemade food is complete. I only do this once a week, so it is not like I have to prepare my dog food every day.

Tuna is truly an amazing food with a number of benefits that contribute to a healthy lifestyle. Tuna is rich in Omega-3 polyunsaturated fatty acids and has been known to reduce the risk of heart disease. It is also low in fat and cholesterol making it a great alternative to beef. Not only is tuna a powerhouse of nutrition, it is also one of the most delicious sources of lean protein that you will ever sink your teeth into.

Tuna is also easy to cook. Its a hardy fish and holds together well on the grill, in the oven, or on the stove top. The following recipe is one of my favorites and is fairly easy to prepare.

I made this particular dish the other day and it was absolutely wonderful. My wife, who normally does not eat big portions, cleaned off her plate and wanted more, so that is a very good sign.

The thickness of the tuna steak you use really depends on how rare you like your tuna. Because you are only searing the outside of your tuna steak, it will not be in the pan for very long. So the thicker the steak, the more rare the center will be.

I personally do not like my tuna too rare, so I usually make this recipe with thinner cuts of tuna. This is just a preference, not a requirement. Many people, including chefs say the only way to eat tuna is rare. I guess you will have to be the judge.

Let us move on to the recipe shall we?

Seared Sesame Encrusted Ahi Tuna with a Cilantro, Garlic and Lime sauce..

I should mention one thing before we begin this recipe. I do not follow exact measurements in recipes. I measure everything by eye, so the following measurements are only to be used as a guide. So don’t get too mad at me!

This is optional, but I like to toast the sesame seeds in a dry pan first before I put them on the tuna. The seeds become nutty and aromatic when you toast them. This is highly recommended if you have the time and is quite easy to do. Simply heat a dry pan over medium heat, then add the seeds shaking the pan occasionally. You may have to do this in batches, depending on how many seeds you are toasting. You do not want to overcrowd the pan. Keep an eye on the seeds and make sure they do not burn. Toast them until they darken a bit and start to become fragrant. Remove and let them cool before adding them to the tuna.

INGREDIENTS:

1/4 Cup Black Sesame Seeds

1/4 Cup White Sesame Seeds

1 Tablespoon of Sesame Oil

2 - 6 ounce Ahi (Also known as Yellow Fin) Tuna Steaks

Salt and Pepper to Taste

MARINADE/ DIPPING SAUCE

1/ 2 Cup of Low Sodium Soy Sauce (Who needs the extra sodium, right?)

1 Lime (Juice and Zest - If you want more lime flavor, add another)

1- 2 Cloves of Garlic Minced

2 Tablespoons of Honey

1 Tablespoon of Sesame Oil

2 Tablespoons of Freshly Chopped Cilantro Leaves

1) Prepare the marinade. Add all marinade ingredients to a small bowl and mix well. Reserve half of this marinade in a separate container to use as a dipping sauce.

2) Get a glass baking dish or other non-reactive container to marinade the tuna in. You want the tuna steaks to fit snuggly in the dish so that they are surrounded nicely with the marinade. Pour the marinade into the dish and put the tuna steaks in and kind of swirl the marinade around so that you coat the fish well. Cover with some plastic wrap and refrigerate. Another option is to pour the marinade in a large zip lock bag, add the tuna, and then squeeze out the air. Marinade for 30 minutes to an hour, turning the tuna about half way through.

3) Remove tuna from fridge and let stand at room temperature for about 20 minutes or so.

4) Remove tuna from marinade, shaking off any excess marinade and dry on paper towels.

5) Heat a saute pan over medium heat and add 1 tablespoon of sesame oil. The oil should be hot but not smoking.

6) While the pan is heating, arrange your sesame seeds on a flat dish. Roll the tuna around in the seeds pressing down as you roll ensuring the seeds are packed into the tuna nicely.

7) Add the tuna to the hot saute pan and shake it a bit to make sure the tuna does not stick. Sear for 30 to 40 seconds on both sides.

8) Remove and serve with the reserved dipping sauce.

For side dishes with this recipe I usually keep things pretty bland as I don’t want anything to compete with the flavors in the tuna. So I usually prepare a side of steamed green beans with a bit of butter, salt and pepper or other vegetable along with some lightly seasoned jasmine or basmati rice.
